Consumers now want to know where their food comes from and the craft chocolate movement has created increased awareness and demand for high quality cacao. Cacao has always been a commodity crop and with very few exceptions has been bought and continues to be bought at one price, regardless of type of cacao grown or the care with which it has been processed. We work with farmers across Central and South America to rescue unique varieties, identify material with highest potential, and together with craft chocolate makers conduct sensorial testing to select cacao best suited for fine cacao market.
